Sun Dried Tomato Pesto - Thanks Chris!


My friend Chris lives in New Orleans, but comes out to CA to visit quite frequently. He loves to cook, but since he doesn't have a kitchen where he stays during his visits, i invited him to work on a collaboration dinner. I make happy meatballs (cuz we're addicted) and he makes sun dried tomato pesto with linguine.

Now that I know how easy pesto is to make, especially with my magic bullet (not that "magic bullet" ladies), I will be making some again very soon. Of course it will be on a night when calories won’t be on the mind. I’m sorry I wasn’t able to get pictures of the step by step process.






The basic ingredients are lots of fresh chopped basil, extra virgin olive oil, minced garlic, pine nuts, parmesan cheese, salt, and roughly chopped sun dried tomatoes in olive oil. While the water is boiling, puree all of the dry ingredients together in some sort of food processor in a few pulses while slowly adding the olive oil. We used some olive oil from the sun dried tomato jar to add more flavor. I don’t have measurements because he just eyeballed it. Here is a easy pesto recipe i found online.Once the pasta is just about al dente, add the pesto sauce into a large pan with some more chopped sun dried tomatoes over low heat. Add the pasta to the pan and toss to coat evenly. Plate and sprinkle some cheese on top. Eat alone or serve with Happy Meatballs.
